Jell-O Flavored Marshmallows

· 1 (3-ounce) Jell-O mix, any flavor (strawberry, mango, and peach work well)
· 2 envelopes unflavored gelatin
· ½ cup cold water
· 1 cups sugar
· cup light corn syrup
· ¼ cup water
· ¼ teaspoon salt
· Powdered sugar
Line a 9"×13" pan with plastic wrap and spray with non-stick spray. In bowl of an electric mixer, sprinkle unflavored gelatin over ½ cup cold water. Let stand for 10 minutes. Meanwhile, combine sugar, corn syrup, and ¼ cup water in a small saucepan. Bring mixture to a rapid boil and let boil for 2 minutes or until it reaches 245–250° F. Remove pan from heat and stir in Jell-O. Pour hot syrup mixture onto gelatin mixture. Add salt and, using the whisk attachment, beat on high speed for 12 minutes. Pour into prepared pan using a rubber spatula covered in non-stick spray. Gently press some plastic wrap sprayed with non-stick spray on top of the marshmallows to level marshmallow mixture out and create a seal. Let mixture sit several hours or overnight until cooled and set. Lightly dust counter with powdered sugar and dump the marshmallows out. Cut into pieces and dredge in powdered sugar. Store in an airtight container.
