This is the perfect main course for a special-occasion dinner. Easy to prepare, delicious, and pretty, this dish is one we often turn to when we want something extraordinary. It’s easy to double, and why not? The leftovers are just as amazing the next day!

Ingredients
2 boneless, skinless chicken breasts
1 tablespoon Dijon mustard
¼ teaspoon onion salt
10 asparagus spears, trimmed
2 slices thin deli ham
2 slice Havarti cheese
Fresh ground pepper, to taste
3 tablespoons butter-flavored crackers, crushed (Keebler Club Crackers®, Ritz®, etc.)
Almond slivers, for garnish (optional)
Directions
Preheat oven to 350° F. Pound chicken to about ¼ inch thickness. Spread with mustard and sprinkle with onion salt. Place asparagus spears (5 per breast) down the center of the chicken. Place ham and cheese slices atop asparagus; fold chicken over and secure with toothpicks if necessary.
Place seam side down in an ungreased 8-inch square baking dish. Pepper chicken to taste. Sprinkle with cracker crumbs. Bake uncovered for 20-25 minutes, or until chicken juices run clear. This can be served with your favorite Hollandaise sauce, but it’s so juicy and flavorful that there’s no real need for a sauce. We like to garnish with almost slivers when we have them.
